Our bodies are geared toward getting fat. That's what they want to do. When you starve the body, the metabolism slows down so it can store more calories. When you eat too much, the body sticks some calories in its reserve tank. The slower the metabolism, the more efficient your body is at using its energy. Losing weight is rather antithetic for the human body, and it's academically dishonest to reduce it to a simple "it's all about the calories" mantra. Different foods have a different effects on how the cells will metabolize. Polysacharides (i.e., bread) have a triple (or more, but generally triple) carbon-to-carbon bond, which makes them harder to break down than, for example, a monosacharide (i.e., rice). Eating foods that easily break down will help increase the metabolism, which will thereby increase the basal metabolic rate. And I never even took a health class. That's just basic 101 stuff.
