i doubt anyone would care if iran had nuclear power if there wasn't the risk of them creating nuclear weapons in the process

you can get both power and weapons from nuclear fission. that's the same technology .

Iran benefited from being an NPT signatory by being allowed to trade for nuclear power technology and secrets with other NPT nuclear powers. The whole reason the IAEA was inspecting Iran's facilities was to give the rest of the NPT signatories confidence that Iran wouldn't use that technology to develop weapons grade material. Iran violated that confidence by having a secret nuclear program.

a bomb is quite complex, you have to get a warhead to do what you instead had a whole nuclear plant doing - creating that much force in a warhead is pretty complex stuff
