Huckabee is stealing the "conservative vote" exist polls show that those claiming to be "conservative" are splitting between huckabee and Romney. While "moderates" are voting for McCain. Its not that complicated.

Had Huckabee dropped out, since he's still in 3rd place and would never had chance to win. Romney would have got the votes.

Huckabee is a spoiler relying on the Christian vote, not the conservative one.
