| aye, BBQ is one of my favorite foods. Baby Back ribs... oh man, I make some killer braised baby back ribs. I feel sorry for anyone who hasn't had my baby back ribs, so that's 99.99999% of the world Also, Brunswick Stew is awesome. Plus bacon fat is great for frying stuff or even adding to a salad dressing or soaking toasted bread in to add to pasta or a salad.Pork has a lot of uses :yum: | ||||

| lol, anytime someone says they hate pork chops, I always say "that's because you've never had good pork chops" Most people overcook their pork and it makes it tough and a pain in the ass to eat (much less enjoy). But when you can make it tender and flavorful, there's nothing to hate about them because they hold no flavor of their own. | ||||

| Flavor DELIVERY. That's what most of cooking is... delivering the best flavor from the food to your tongue. Quick personal theory on food The three important aspects of a dish are as follows: 1. Looks - We see our food first, and if food doesn't look appetizing, we will be less likely to enjoy it. The feast for the eyes should be taken seriously. 2. Smell - We smell our food second, and get an idea for what to expect. Aromatics (like garlic, onions, leeks, shallots, carrots, celery, as well as spices and herbs) are very important in cooking for good smells and taste. No one odor should overpower the dish, that will denote too much of that flavor. 3. Taste - We finally taste our food, and is obviously the most important part of a meal. Flavor needs to be even, as does doneness. Each bite should be like the previous and the next. Just thought I'd share that I have an infatuation with cooking | ||||

| Chickens do have major problems with disease and bacteria, however, it increased since the "old days." That is why we adapted and made clean chicken farms. Free range is fine and all, but like I said, the eggs are probably pasturized (nothing wrong with that, it's just to keep you safe), and free range chicken should be cooked throughly (really, no different than regular chickens) | ||||
